Healthy Banana Bread

I made this banana bread last week – it’s really tasty, low in refined sugars, easy to make and my eldest son loved it.

I found this recipe online and the adjustments I made were: I used maple syrup as my ‘sugar’ flavour, added in Cadbury choc chips as the treat and extra virgin coconut oil as the oil base. I also just used plain white flour as that’s what I had in the house at the time.

Health Tip: Coconut oil is considered a super food as its maintains good cholesterol, reduces stomach fat and is considered a healthy saturated fat. The body also absorbs this oil better than any other.

This was a great one to involve the kids with – they had fun mashing the bananas and throwing all the ingredients into a large bowl.
